What is jacketed kettles?
Jacketed steam kettles eject steam into an outer wall, creating an even flow of heat throghout the entire cooking basin. The temperatature of the heat is determined by pressure, ranging from 1-50psi. This produces temperatures ranging from 240℃F to 280℃F.
What kind of food can be cooked using jacketed kettle?
Ideal: soups, delicate sauces, pasta, gravies, desserts, stews, braising meats, rice, reheating and holding themm until serving.
